On Wednesday night's (January 12) episode of "I Used to Be Fat," we met 18-year-old Dominick on the day of his high school graduation. He is part of a big Italian family that loves food and lots of it, which was one of two big obstacles for him to overcome on the show.

MTV News caught up with enthusiastic trainer Saran Dunn Moore to get the scoop on Dominick's journey.

"Part of his struggle, part of his story, he comes from a large Italian family," Moore told us. "They make spreads of pasta and lots of unhealthy foods, so the biggest challenge for him was to learn how to make healthier choices and teach the family how to cook healthier," she explained, adding that Dominick is now learning firsthand about healthy cooking. "He's going to school to be a chef, and he is phenomenal. His food is so good."

The other challenge in Dominick's transformation involved exercise. In pushing the scale at a weight of more than 300 pounds, Moore said she had to get him moving.

"Dominick was a kid who was inactive, didn't do much. He sat around all day," she said. "He used to play tennis, he used to be active, but after a while, things fell apart. He didn't have that push to say, 'Get up off the couch.' It was accepted [by Dominick and his family]: 'This is what Dominick does. He doesn't move.' It was like, 'Oh well.' "

Moore said her job was to get in there and change that attitude: "No, that's not OK. I'm coming in and I'm changing your life."

Don't miss "I Used to Be Fat" on Wednesdays at 10 p.m. ET on MTV.
